This dessert recipe is from the Joy of Baking.com. The State of Ohio has their own special name for this. Buckeyes look slightly different than peanut butter balls
in that the top of each bonbon is bare of chocolate. This is done to make it look like the
nut of the tree. It just happens to be the state tree of Ohio. The name comes from folklore.

Ingredients:
2 cups creamy peanut butter
1/4 cup unsalted butter, room temperature
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
2 - 2 1/2 cups confectioners sugar

Chocolate Coating
9 ou semi sweet chocolate, chopped
2 tablespoons shortening

Line a baking sheet with parchment paper.
Place the peanut butter, unsalted butter, and salt in a bowl.

Heat for about one minute or until just soft
(check and stir the ingredients every 20 seconds).
Stir in vanilla and confectioners sugar and mix until it
has the consistency of a dough.
Roll the dough into 1 inch round balls.

Place on the cookie sheet and refrigerate for one hour.
Melt the chocolate and shortening in a heatproof bowl

over a saucepan of simmering water.
Dip the balls, one at a time, in the melted chocolate,
making sure the entire ball is coated with chocolate.
Then, with two spoons or a dipping fork,
remove the peanut butter ball from the melted chocolate,
allowing any excess chocolate to drip back into the bowl.
Place the chocolate covered balls back on the baking sheet.
When all the balls have been dipped in the chocolate,
place in the refrigerator until the chocolate has set.

I love buckeye's. I used to have a neighbor from Ohio who made them for me at Christmas!

Hi Melissa...My daughter makes buckeye bars...pressing the mixture into a dish and using the chocolate as a topping. She cuts it into squares after refrigerating it. It has the same great taste and is really easy! Thanks for sharing...Debbie

Hi Melissa, These are some of my favorites! My aunt( who is a great cook) makes these and I was going to call her tonight to get the recipe. I was really craving them! I don't have any good cookie recipes, I usually just buy the dough already made. LOL! But.... I have been looking through cookbooks because I really want to make some things from scratch next week. As far as making our model home look old, Rich and I read a lot of magazines and watched a lot of "If Wall Could Talk" on HGTV and tried to use that knowledge to make it seem as if we were in an old home.
A great magazine to use for this is New Old House or This Old House.

Hi Melissa, thanks for swinging in. Sure hope the cold wind didn't blow you in the door.. It is frigid out there and the winds are so strong.. It will be a perfect evening around here to make some pies, peanut butter fudge and a couple of other things. We start the dinners tomorrow, so I'll be cooking like crazy this evening..lol. Melissa, I am going in with him to the doctor this time. I am going to insist that they give him a shot. It's aweful if the grandkids don't get to see him.
They will all be disappointed. We where just talking and I am still planning for my family here and we will have to stick grandpa in the master bed. I have cleaned evrything from top to bottom and bleached it all. I am a bottle of bleach person. It's crazy. He did eat supper tonite and he says it was great. So that is an improvement over yesterday. WEll see.
